Vegetable Hydrabadi Biryani
Ingredient
Cashew nuts 2 tbspMint & Coriander 1 cup
Biryani Masala 1 tbsp
Coriander powder 1 tsp
Garam masala powder 1 tsp
Whole Garam Masala 1tsp**
Cauliflower 1 cup(big pieces)
Ginger Garlic Paste 1tbsp
Fried Onions 1/2 cup
Carrots 1 med(cut in big strips)
Potatoes 1 big
Jeera 1 tsp
Rice 1 cup(soaked for 1/2 hour)
Ghee 4 tbsp
Curds 3/4 cup(thick)
Salt To Taste
Saffron few and soak in 2 tbsp hot milk.**
Earthen pot 1 big
Method
Take a pot add ghee.Add whole garam masala .
Saute & add jeera.
Add vegetables and add salt.
Need to cook till they are half done.
Add ginger garlic paste.
Add biryani masala & half of the curd.
Soak rice for 1/2 hr in abowl.
Now boil water add rice to it with ghee and whole spices**
The rice to be cooked half and strain the rice.
Take half of the vegetables out and keep aside.
In remaining cooked vegetable that are in the pot add rest of the curd .
Mix well .
Add half of mint & coriander
Lastly add fried onions , nuts & saffron milk.
Take a ball of atta . make it into cylindrical long & cover the edges of pot.
Then lastly cover with foil and put in on sim flame for 20 min.
Enjoy with mix veg raita
Mix Vegetable Raita
Ingredients
Thick Curd 2 cupsOnion 1 small chopped
Tomato 1/2 chopped
Cucumber 1/2 chopped
Pomegranate 2 tbsp
Salt To taste
Roasted Cumin powder 1/2 tsp
Method
Beat the curd well and add all the vegetables .Add seasoning.
Serve Chilled With Vegetable Hyderabadi Biryani..
Note
**whole spice include clove,black pepper whole , green cardamom & cinnamon**Soak all the vegetables in cold water for 10 min..
**For fried onions . slice the onions & add little cornflour & fry then on med till brown.
